THE LEGUMES (SOY BEANS) AND OTHER NEW NON-ANIMAL PROTEIN PRODUCTS FOR HUMAN NUTRITION IN SUB-SAHARAN AFRICA Izuchukwu Innocent Ibeawuchi Federal University of Technology, Owerri, Nigeria Abstract Apart from the animal proteins, the plants especially legumes have abundant protein content of which soybean is outstanding having more percentage than animals. However, the sulphur containing amino acids methionine and cystine are limiting in the proteins of the grain legumes. This limitation is made whole by combined use of cereal grain in the diet. Other vegetables, fruits and lesser known legumes have some quota of protein to complement in human nutrition. The people in sub-Saharan African must learn the production and utilization of plants rich in protein so as to live and maintain a healthy life. The women folks must be trained educationally, since they are the bedrock for the sustenance of human society. Introduction The hope for the future is in the hands of the smallholder farmers who reside in the rural areas and produce majority of our foods especially in sub-Saharan Africa. The multiplicity of issues shaping the future of sub-Saharan Africa food sources and its security nutritionally including the well-being of her people revolves around good food that is stuffed with protein.
